Almond Joy Stuffed Dates
A better-for-you sweet treat that tastes like nostalgia but loves your hormones back
Somewhere along the way, we were told that dessert had to be either delicious or supportive. Rarely both.
These Almond Joy Stuffed Dates are here to lovingly call bullshit on that idea. 😘
They’re chewy, coconutty, chocolate-covered, salty, and genuinely satisfying, the kind of sweet treat that doesn’t send your blood sugar (or mood) into a spiral (and they are so dang easy to make). If you grew up loving Almond Joys, this is the grown-up, Cycle Kitchen-approved version.
No baking. Minimal ingredients. Maximum joy.
Ingredients
Makes 16 stuffed dates
16 Medjool dates, pitted
16 raw almonds (plus 16 extra for topping, optional but recommended)
½–¾ cup shredded coconut
1 tbsp coconut oil, melted
Optional: drizzle of honey (to taste)
Optional add-in: ¼ cup hemp hearts (for a little extra ompf)
Chocolate Shell
¼ cup dark chocolate chips
½ tbsp coconut oil
Flaky sea salt, for finishing
Instructions
Prep the base — open each Medjool date and press it into a mini muffin tin, creating a little cup. Place one almond inside each date.
Make the coconut cream — add shredded coconut to a food processor.
And I won’t lie to you, you need patience here. Process for about 8 minutes, stopping occasionally to scrape down the sides. Around the 4-minute mark, add the melted coconut oil and continue processing until the mixture becomes creamy and holds together. If you’re adding hemp hearts, pulse them in during the last minute of blending. If you want it sweeter, add a small drizzle of honey and pulse again.Assemble — spoon the coconut mixture over the almond in each date cup. Press it down gently with your finger or the back of a spoon.
Create the chocolate shell — melt dark chocolate chips with coconut oil until glossy and smooth. Pour over the coconut layer.
Finish + chill — press an almond on top of each date (for aesthetics, but also extra crunch never hurt anyone). Sprinkle with flaky salt. Freeze for 1 hour, then transfer to an airtight container and store in the fridge.

Dates = natural sweetness + fiber to support steady energy, balanced blood sugar, and fewer mood swings a quiet staple for women’s hormone health (I could write a whole post on why I love dates)
Shredded coconut = healthy fats that slow sugar absorption, support hormone production
Almonds = a little dash of protein, vitamin E, and additional healthy fats into the mix.
Hemp hearts (optional) = omega-3s, plant protein, and minerals that support hormone signaling and overall nourishment without changing the flavor
Dark chocolate = magnesium-rich, antioxidant-packed, and deeply satisfying (because dessert should still feel like dessert)
Almond Joys were one of my favorite candies growing up. I’m a lot more intentional now about the ingredients I put into my body, so I won’t be eating an actual Almond Joy… I will, however, absolutely still be enjoying the flavor of one. So here we are.
If you want to skip the dates entirely and make these more like a homemade Almond Joy with just the coconut, almonds, and chocolate, you totally can; they’ll still be just as delicious.
